When you hear the words “pumpkin” and “dessert” in one sentence, the only thing that comes to mind for most of us is pumpkin pie. This fall try my healthy 3 ingredient Pumpkin Candy and prepare to be amazed!

I know what you might be thinking “Pumpkin Candy? Is this a joke?” I was skeptical myself when I saw this recipe on TV many years ago. Since then the idea of candy made out of pumpkin was as absurd to me as being a vegetarian. Years passed, a lot had changed since then and here I am, all grown up, eating mostly plant based and loving my Pumpkin Candy.

I left my first batch of Pumpkin Candy in a glass jar on the kitchen counter relying on David’s and Daniel’s curiosity… and it worked. I watched them try little orange candies for a couple of days and could not hide my smile. They liked it!!! To say that David was surprised to learn what the candy is made of is an understatement. Daniel still has no idea that the candy is made out of pumpkin and so are his friends, who come over for a snack after riding their bikes and skateboards. They like it and that’s what matters!

To make this recipe you will need 3 ingredients plus patience. It is simple, yet requires some time. Make Pumpkin Candy on the weekend (or any other day you are home), while you are busy with your other daily activities.

PRO TIP: To mask pumpkin taste completely ,add spices – ginger, nutmeg, cinnamon, etc.

These Pumpkin Candy make a perfect gift or Thanksgiving party favour. Make a few batches, pack them in pretty jars to give to your friends this holiday season.

  1. In a medium bowl mix cubed pumpkin, sugar and lemon, cut into rings
  2. Mix well and leave for a few hours or overnight
  3. On medium heat bring mixture to boil and cook for 5 minutes. DO NOT MIX! Turn off the heat and let cool completely. Repeat 3 times
  4. Transfer pumpkin to a colander and leave for an hour
  5. Preheat oven to 360F
  6. Place pumpkin pieces on a baking tray, lined with parchment paper
  7. Bake for about 5 hours till pumpkin pieces are springy and not moist ***Cooking time depends on your oven, pumpkin type and cube sizes
  8. Let cook completely
  9. Store in a fridge in an airtight glass container
