This easiest Creamy Avocado Pasta will be on your table in under 20 minutes! A weeknight dinner recipe that the whole family will love.

As Moms and cooks we adapt a lot of recipes for the kids palettes, for certain dietary regimes (i.e. plant based, raw food etc.), for newest equipment (i.e. slow cooker, pressure cooker). This recipe is a grown-up version of my old go-to toddler meal. In the early days of my kids transition to solid foods, I used mashed avocado as a sauce for their pasta. As their palettes developed, I would add some seasonal veggies.

Now the kids are older, we make this Creamy Avocado Pasta as a one pot meal for the whole family. For the big batch I make the sauce in my Ninja blender. It does not get any simplier than that!

  1. Cook pasta according to package directions. Drain, reserving 1 cup of pasta water
  2. Cut cherry tomatoes in half and bell peppers into small cubes
  3. In a blender cup combine avocados (seeded and halved), lemon juice, garlic and 1/2 cup of pasta water
  4. In a large bowl combine pasta, avocado sauce, cherry tomatoes and bell peppers
  5. Season with salt and pepper to taste and serve immediately
