Mediterranean Orzo Pasta Salad is a simple vegetarian side dish recipe. Packed with flavour, refreshing salad that is ready in only 20 minutes! What’s not to like?

Mediterranean Orzo Pasta Salad combines orzo (rice shaped pasta) with juicy cherry tomatoes, crunchy cucumbers, tender spinach, tangy feta cheese, sweet-tart sun dried tomatoes and simple lemony dressing.

I quickly threw this salad together after a weekend of camping. This is a tweaked summer version of our family favourite orzo casserole (recipe coming soon!).

Crisp air, yellow leaves on the tree in my backyard are all signs that summer is almost over. This means Back To School for kids and back to lunch prep for parents. This salad is a great make-ahead lunch for busy school or work days, just remember to leave tomatoes whole to avoid sogginess and disappointment.

Variations of this salad may also include chopped red onions, cup of cooked chickpeas or grilled chicken breast.

  1. Cook orzo pasta according to package instructions. Drain and let cool
  2. Cut cherry tomatoes in half, slice cucumbers and spinach
  3. In a cup stir together olive oil, lemon juice, salt and pepper
  4. In a large bowl add all the salad ingredients, pour the dressing over and toss well
  5. Serve cold
