SMASHED CHICKPEA AVOCADO SPREAD

This Smashed Chickpea Avocado Spead is the BEST! Fresh, rich and creamy spread that you can feel good about eating. My favourite part is that you could whip this recipe in under 10 minutes!

With summer here, we are barely eating at home anything other than breakfast. Lunch and dinner are usually packed to go and enjoyed at the beach, playground, local outdoor movie night or summer concert. While planning the menu, I have to make sure that it is wholesome and satisfies everyones’ preferences. Like this Smashed Chickpea Avocado Spread. We enjoyed it on a bagel, Danny devoured his with the chips and my toddler are hers on a rice cracker. Bingo!

Loaded with healthy fats and so much delicious flavour, this spread has been on repeat in my kitchen for a few weeks now. It is also a wonderful Back-To-School or work lunch idea.

Instructions
  1. In a medium bowl coarsely mash chickpeas and avocado with the back of a spoon or a potato masher
  2. Add tomatoes, cilantro, lemon juice, red onion, salt and pepper to taste. Mix well
  3. Keep refrigerated until ready to serve
