SIMPLE VEGAN PITA PIZZA

extra virgin olive oil
salt and pepper to taste
Instructions
Drain tofu and place in a medium bowl, mash with a fork
Combine tofu, spinach, sun dried tomatoes, basil and thyme and stir to combine
Place pita breads on 2 large baking sheets lined with parchment paper
Drizzle pitas with olive oil. Spread oil with a brush, making sure to cover the edges
Divide tofu mixture evenly among pitas, spread with spatula
Broil on “High” until pitas edges are lightly brown
