Life feels more uncertain than ever. With novel Covid-19 coronavirus spreading all over the world, school and business closures, entire countries going into lockdowns and general economic instability there is a lot of unpredictability in the days to come.
One thing remains certain – we all need to eat. Times when families are staying home for quarantine, kids are snacking non-stop (mine do!) and trips to the store are as rare as possible, call for extra creativity in the kitchen.
With most of us used to on-the-go life, we now create new rituals, like everyday family meal. This is a symbol of shared family life, a chance bring structure to the day. This is the time to check in with each other.
Before Covid-19 quarantine, we used to have meals as a family only on the weekends (hockey schedule permitting). Kids love that these days all four of us share a meal every day. Sounds like a simple thing, but it actually made a huge difference for us.

- 2 cup cherry tomatoes, cut in half
- 2 can 1 can chickpeas (15Oz) drained and rinsed *** or 4 cups cooked chickpeas**
- 1 cup marinated artichoke hearts
- 1/2 bunch cilantro, finely chopped
- 1/2 bunch chives, finely chopped
- 1/2 red onion, finely chopped
- 4 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp freshly squeezed lemon juice
- 1 clove garlic, crushed
- 1 tsp dijon mustard
- 1/2 tsp oregano
- 1/2 tsp basil
- salt and pepper to taste

- In a cup, combine all the dressing ingredients and mix well. Set aside
- In a large bowl combine chickpeas, tomatoes cut in half, red onion, artichoke hearts, finely chopped cilantro and chives
- Top salad ingredients with the dressing and toss to coat evenly
