I’ve been absent from the blog for the last couple of weeks. Sleepless nights with teething baby don’t help creativity. On a positive note, being beyond exhausted I’m looking for ways to simplify daily activities even more always with a hope of getting more sleep. This recipe is just one example of a lazy dinner that comes together in less than 15 minutes.
When my 8 year old heard of pizza for dinner, he immediately offered his help. I automatically said “Yes”. A few minutes into the process, he was mashing tofu with a fork looking quite discouraged. Tofu and spinach are not necessarily first pizza ingredients that come to a child’s mind. And it took less than 15 minutes for him to change his mind and give this recipe his approval.
Just looking at these pictures makes me think of hot summer days, dinners on the patio and crisp white wine, which will pair perfectly with these pita pizzas.

- 4 large pitas
- 3 cups spinach coarsely chopped
- 1 cup firm tofu
- 1 cup sun dried tomatoes drained and chopped
- 1 tsp basil
- 1 tsp thyme
- 2 tsp extra virgin olive oil
- salt and pepper to taste
Ingredients

- Drain tofu and place in a medium bowl, mash with a fork
- Combine tofu, spinach, sun dried tomatoes, basil and thyme and stir to combine
- Place pita breads on 2 large baking sheets lined with parchment paper
- Drizzle pitas with olive oil. Spread oil with a brush, making sure to cover the edges
- Divide tofu mixture evenly among pitas, spread with spatula
- Broil on "High" until pitas edges are lightly brown
