Healthy and refreshing summer treat the whole family would enjoy and feel good about it. This easy 2 ingredient frozen yogurt bark contains no added sugar.
Summer is here, which means no school, fun activities with kids and lots of cooking, among other things. This summer I wanted to involve kids in experimenting with food and creating healthy recipes. I see it both as an activity, where we could be creative and have fun, and as a teaching opportunity. I will share results of my collaborations with Chef Daniel (a.k.a. my 8 year old son) and our 1 year old Sous-Chef Olivia in the series that we tentatively call “Kitchen Playdates”.
The first recipe in the Kitchen Playdate series was created by the kids for the kids of all ages. Frozen treat from a few simple ingredients with unlimited possibilities for creativity has become a staple in our desert rotation.
I make my own yogurt in Instant Pot a couple of times a week. Between enjoying yogurt as a healthy snack, using it for kids smoothies and popsicles, making my own Greek yogurt and even cream cheese (yes!), we go through a lot of yogurt.
We used fresh berries that we picked this weekend. Here are some alternative topping suggestions:
* dehydrated fruits
* chocolate chips
* shredded coconut
* nuts
Just note to eat it as soon as pieces are removed from the freezer as it melts in about 10 minutes.
Ingredients

- Line baking tray with parchment paper
- Pour the yogurt onto the baking sheet and spread slightly to even
- Sprinkle fruits onto the yogurt
- Freeze for 2-3 hours until the bark is solid
- Remove from the freezer and break into pieces
