These whole roasted mushrooms topped with thyme, garlic and lemon dressing make for an excellent side dish.
The beauty of this recipe is in its simplicity. You do no more than put cleaned mushrooms in the oven and let it to its work, and sauté garlic in olive oil with lemon juice and fresh thyme.

- 1 lb mushrooms
- 3 tbsp olive oil
- 3 garlic cloves
- 1 tsp fresh thyme
- 1 tbsp lemon juice
- salt and pepper to taste

Instructions
- Preheat oven to 390 F
- Clean mushrooms. Mix with 1 tbsp olive oil, salt and pepper and place on a baking tray
- Bake mushrooms for 15 - 20 minutes. Turn half way through cooking time
- Meanwhile prepare dressing. Heat 2 tbsp olive oil on medium, add crushed garlic, thyme and lemon juice
- Drain oil and liquid from mushrooms
- Place roasted mushrooms into the serving bowl. Add garlic and thyme dressing
- Serve warm
